EFFECT OF GAMMA IRRADIATION IN COMBINATION WITH PACKAGING ON THE SENSORY
QUALITIES OF CHILLED CHICKEN MEAT

ABSTRACT
Dark chicken meat (drumsticks) was gamma irradiated at 0"C and stored at 0" - 5"C up to 25 days. Samples wen withdrawn at intervals for sensory evaluation using 7-points Hedonic Scale by 10 trained panelists. A dose of 3 kGy was sufficient to prolong the shelf-lite of chilled drumsticks. Vacuum packaging besides irradiation at 0°C prevented the development of 'irradiation odor' and 'flavour'. Sensory evaluations of different attributes (appearance, odor, off-odor, flavour, off-flavour, juiciness, tenderness and overall acceptance) of the raw and cooked chicken meat showed that PE-packed unirradiated samples lasted for 3 days compared to the irradiated ones which were acceptable up to 13-21 days. Or the other hand the vacuum-packed irradiated chicken meat had a longer shelf-life of more than 25 days compared to the vacuum-packed, unirradiated samples which lasted about 6-9 days.
ABSTRAK
Daging ayam jenis gelap (bahagian paha) telah disinar gama pada suhu 0"C dan disimpan pada suhu 0"-5"C selama 25 hari. Sampel-sampel diambil pada masa tertentu untuk penilaian sensori oleh 10 ahli panel terlatih menggunakan kaedah 7-Skala Hedonik. Dos sebanyak 3 kGy didapati mencukupi untuk memanjangkan tempoh penyimpanan daging ayam sejuk-dingin. Kombinasi pembungkusan secara vakum dan penyinaran pada 0"C dapat menghindarkan masalah bau dan rasa sinaran. Ujian sensori ke atas atribut-atribut yang berlainan (rupa, bau, bau-asing, rasa, rasa-asing, kejusian, kelembutan dan penerimaan secara keseluruhan) daging ayam mentah dan yang telah dimasak menunjukkan bahawa daging ayam tak tersinar yang dibungkus dengan plastik PE hanya dapat bertahan selama 3 hari berbanding dengan daging ayam dibungkus PE dan tersinar yang masih diterima sehingga 13-21 hari. Ayam tersinar yang dibungkus dengan plastik vakum mempunyai tempoh penyimpanan melebihi 25 hari berbanding sampel kawalan yang bertahan selama 6 - 9 hari.
